Aubergine Pizza
This is fast food at its absolute finest. Ready to eat in 15 minutes, it’s not only quick but delicious and healthy too.
Ingredients (serves 2):
1 aubergine cut into 1/2 cm slices
olive oil
3 small tomatoes, sliced
green pesto
1 mozzarella cheese, sliced
fresh basil leaves, torn
black pepper
Parmesan cheese
Method:
Heat the grill to its highest setting.
Brush the aubergine slices with olive oil and grill on both sides until lightly browned.
Spread 1 tsp of green pesto over each slice, then top with the tomato, mozzarella & basil. Add a grating of black pepper & Parmesan cheese & pop under the grill for a few minutes until the cheese has melted.
Serve with an extra drizzle of olive oil and some crusty bread to mop up the delicious juices.
