Roasted Pepper & Garlic Pasta Sauce

Not or particularly pretty but down right delicious and easy peasy lemon squeezy. One of my go to mid week store cupboard standbys.

Ingredients (serves

1 jar of roasted peppers in oil, drained

1 tin of chopped tomatoes with herbs

sea salt & freshly ground pepper

2 large garlic cloves, skin on

a pinch of dried chilli flakes

basil leaves (optional)

 

Method:

Put the garlic cloves on a tray in a hot over for 15-20 minutes until fragrant & soft, then remove from the oven and squeeze the soft centre out.

Place the tomatoes, peppers, garlic, chilli flakes & seasoning into a processor and blitz until blended.

Pop the contents into a saucepan and heat gently until piping hot and serve over freshly cooked pasta with torn basil leaves and a good grating of Parmesan.
