Chilli Cheese

imageThis really is the ultimate cheese on toast: full of good things, it’s pretty healthy to boot. As lunches go, you really can’t go far wrong. Once again, it’s one of those ‘think of a number’ recipes I so often publish – simply add as much or as little of each ingredient as you fancy. It’s also a great way of using up a few left over bits and pieces from the fridge. This recipe serves 1.

Ingredients:

3 firm cocktail tomatoes, chopped

a deseeded chilli (green is obviously milder, red can make it quite fiery in flavour), finely chopped

a dessertspoon of finely chopped onion

a dessertspoon of chopped coriander

a good chunk of cheese, grated

2 slices of bread

 

Method:

Preheat the grill to high and pop the bread under to toast both sides.

Combine the rest of the ingredients well and when the toast is done, divide evenly between the two slices.

Pop back under the grill for 2-3 minutes until the cheese has melted and the tomatoes are sizzling genty.

Serve hot
