Today’s Take Two recipe involves prawns and rocket, the rest is store cupboard stuff. A simple meal that is as easy to make for a family of four as it is to rustle up if you’re home alone. It’s based on a Jamie Oliver recipe on his fantastic website www.jamieoliver.com
Ingredients (serves 2):
200g bag of large prawns ( cooked or raw, but I prefer raw) -defrosted if frozen
1 clove of garlic, finely chopped
1 red chilli, de seeded and finely chopped
1 tbsp sun dried tomato paste
100ml white wine
salt and freshly ground pepper
a good handful of rocket
zest and juice of half a lemon
Cook the spaghetti according to the instructions. Drain and reserve a little of the cooking liquid.
Meanwhile gently heat a good splash of olive oil in a frying pan and fry the garlic & chilli For a minute, taking care not to burn the garlic.
If using RAW prawns add them now: turn up the heat slightly and sauté for a minute before adding the tomato paste and cooking for a further minute. Season.
Add the wine and allow to sizzle for a couple of minutes. If using COOKED prawns, add them now and heat through.
Stir through half the rocket, roughly torn and add the lemon zest and spaghetti. Toss well to combine – adding a little of the pasta water to loosen if necessary.
Transfer to serving plates and scatter over the lemon zest and the remaining rocket.
